ethanol burns faster,
the 87 octane gas has the most energy,
89 octane lets you advance the timing to get better mileage,
use what your car is designed for will get you the best results.

if you have a car that has no adaptability like an older car, then as long as it does not ping with 87, use 87 octane.

if you have a newer car that has adaptable timing, then do a test to see what works better,
87 should get better mileage, 89 should get you more power.
remember that the computer may not figure out that you have a new octane of gas for half the tank or so. so test on your second tank of gas with the same octane.

The 87 would burn faster as stated above but ethanol has a octane rating of 113 so depending on the mixture% the 89 mixed with ethanol could burn slower than strait 89 octane fuel.

The lower the octane pure gasoline the faster it burns. Now, you must realize that ethanol burns SLOWER than straight 89 octane gasoline thus it helps to resist resist ping and spark knock.

Higher octane ( 89, 93 ) fuel always burns slower than 87 octane fuel.

87 octane.

The higher the octane, the slower and more stable the burn.

Ethanol doesn't further affect it (ex 89 octane fuel will burn the same as any other 89 octane fuel whether it has ethanol in it or not)
