This is a valid question and it's a shame that some people are not taking it seriously. Here is my take on it. First of all the Yankees and Red Sox is the better rivalry of the two. However that's really not the complete answer. Let's look at the history of the Dodgers and Giants for a moment. Prior to 1958 when the Dodgers left Brooklyn followed by the Giants shortly after that, the "Bums" and the Giants were as big a rivalry in New York as any in baseball. Both teams were regular contenders for the National League pennant which made the rivalry extremely important. After they went to the "left coast" only the Dodgers had reasonable success. The rivalry cooled off and now it's really not very interesting to those outside of the two cities.
The Yankees and Red Sox endure because almost every season they have contending teams. Now that the Red Sox have won a couple of world series the rivalry has increased in intensity. All in all it's great for baseball.

Giants vs. Dodgers hasn't been a serious rivalry since about 1966, because in order for a rivalry to stay fresh, BOTH teams have to be good at the same time. Usally, one is good and the other isn't, so the rivalry is stale. Same with Cubs vs. Cardinals.
The same was true with Yankees vs. Red Sox: From 1951 or so to 1972, there was no rivalry, because first the Yankees ruled and the Sox stunk, and then the Yanks fell apart and the Sox had their 1967 "Impossible Dream." It was only in the early Seventies, when both teams started getting better, that the rivalry was reborn. With a few seasonal exceptions, it's remained strong since, and no other rivalry in sports can touch it.

Clearly Yankees/Red Sox.
The Dodger/Giants rivalry is fabricated, based upon when they were both in New York. Fact is, very few Dodger/Giants fans know anything about the real rivalry. They are too removed in time and distance. That rivalry is more about Northern California v. Southern California. Not baseball. The fact is, the Dodgers have a stronger rivalry against the Padres.

Red Sox/Yankees gets more coverage in this day and age, but anyone who completely writes off Giants/Dodgers doesn't know what they're talking about. The hatred between the fans of the oldest rivalry in sports is as strong as ever, but since we're a very East Coast centric nation, people pay more attention; and admittedly the Yankee dynasty & Red Sox tragedy makes their story more inclusive for the rest of the majors.
But anyway, Dodgers suck.

Red Sox vs. Yankees
Its a rivalry that even people clueless about baseball know something about.
While the Dodgers vs. Giants rivalry is a big one, too, the Red Sox and the Yankees get more hype these days.

I have to say Sox vs Yanks is a much bigger rivalry. I'm actually a Pirate fan so I'm not biased at all. I think a large part is because I can't remember the last time either team was very talented. To me watching the dodgers vs giants is like watching sister mary school of the blind vs jerry's kids. At least with the sox and yanks their is a hatred and good hard play between 2 talented teams.

I think the Sox and Yankees have been in recent years but I believe the Dodgers and Giants are more of a rivalry due to the fact that it goes back to when they were both in New York.
