Out of your list...Sleepy Hollow or Edward Scissorhands.
My actual favorites are Charlie and the Chocolate Factory and Ed Wood.
Edit...forgot about Chocolat...that movie was really good too. Let's just all agree that Johnny Depp is awesome!

But, IMHO, the best thing he has EVER done was Ed Wood.
