The "juicy" organs were all removed, and the shell of the body was dehydrated with natron. The dehydration inhibits bacterial growth - like salting and drying meat - beef jerky, etc.
I'll find a good site for you.

In Egypt, the body is covered in Natron, it's like salt and it draws moisture out of the body, that lasts 72 days. Then some organs are removed and the body is wrapped in the cloth. In other cultures where they find mummies, the mummification happens naturally from very dry air.

All internal parts of the mummies body are removed. Then a special hooked tool that looks like a crochet needle is carefully put up the mummies nose and then scoops out the brain tissue. A cut is made on the left side of the stomach, then the stomach and chest organs are removed. The stomach, liver, lungs and intestines are put in special boxes or jars, known as canopic jars. These jars go in the tomb with the body. The heart stays inside the body. Egyptians believed the heart was the centre of intelligence, feeling and that a man would need it in his afterlife ex: canopic jar The body is packed with natron or a natural salt used to dry out dead bodies and internal organs In about forty days the body is washed off with water from the nile then oil is rubbed on the skin to make the skin elastic The dehydrated organs are wrapped in linen and are put back in the body The body is then stuffed with dry materials such as saw dust to make the body look more life like Body is wrapped in good-smelling oils The Wrapping Process Before After The head and neck are wrapped with strips of fine linen. All fingers and the toes are individually wrapped. The arms and leg are also wrapped separately. Between layers, embalmers place amulets or A small trinket or charm that was meant to protect the owner from evil spells or actions. Amulets protect the body in its journey to the underworld. Arms and legs are tied together and a papyrus scroll of the spells from the book of is placed in the hands. Then is wrapped more and a resign is painted over the mummy. This glues bandages together. The first coffin is put in a second coffin . Then others have a funeral honoring the deceased.

Although mummification is often described as preserving a dead body in most cases about all that was really achieved was different methods of drying out a corpse. Early Egyptians noticed that bodies buried in the hot desert sand dried out and remained relatively preserved. When they started burying their dead in tombs another method of drying out or "preserving" the dead was invented. It usually involved removing the soft internal organs and then drying out the body in natron, a naturally occurring mixture of sodium carbonate decahydrate (Na2CO3·10 H2O, a naturally occurring form of soda ash) and about 17% sodium bicarbonate (baking soda, NaHCO3) along with small quantities of household salt (sodium chloride) and sodium sulfate. Natron deposits occur naturally as a part of saline lake beds in arid environments.
Honey was also used and it turns out that it has antibactierial qualities that the ancient Egyptians really knew nothing little about.
