Bonsai plants can be created from basically any plant that grows on a trunk. Contrary to what the previous answerer said, wires are not used to suppress the growth of the bonsai, but rather to shape the trunks/branches (this is noticeable in many bonsai trees that have twisted branches that are very artistic).
Bonsai trees are kept to their small size because you constantly trim and prune at the new growth of leaves and branches. This will keep the plant at a small size, yet letting its main trunk thicken. Over time, the tree will start to look like a miniature version of a full grown tree (which is the ultimate goal of the art of bonsai).
You can create bonsais out of many different plants... ficus, pines, gardenias--the choices are endless!

Bonsai, done properly, is a long process of shaping, pruning, root trimming and 'starvation' of the plant to stunt its growth.
Many of the cheaper, commercial plants are simply hacked, lopped and slammed into pots, where they quickly die after purchase from the transplant shock.

It takes patience and a lot of work.
Whatever plant you want to work with, you start with a seedling and wrap new growth with fine wire to prevent it getting any bigger and force growth only from the places you want to see new branches or shoots, trimming off any unwanted growth.
