What are the rules about kincking onside? What exacly does a team try to gain or achive with doeing it?

A true onside kick is done by a team that wants to quickly regain possession of the ball. Per the NFL rules, the kick must go 10 yards. After it has gone 10 yards the kicking team can grab the ball. The receiving team does not have to touch or catch the ball before that happens.

During a kickoff (not a punt) the ball is free to be possessed by either team after traveling 10 yards or more. Kicking onsides gives the kicking team the best chance to recover the ball and reclaim possession.

If the ball doesn't go 10 yards, or is touched by the kicking team before it's travelled 10 yards, the receiving team will get the ball.

As an aside, you can fair catch a kickoff. It doesn't happen very often, but I've seen pooched kick offs, where a fullback or linebacker will fair catch it around the 40.
