Production of what? I'm afraid that "extensive answers" for something that is not well defined are hard to give.

As far as general production went...

Most of society in Europe at that time was agricultural. They produced food stuffs (yes, that's the actual term) so that people could eat and live.
Other items, like carts, armor, weapons, etc was produced by hand. There was no mass production and no real industry.

a horseshoe would be made individually in a village by a single iron smith, from iron supplied from a central distributor. fired by coal supplied also from a coal mine- that could have several hundred miners working in it

In Poland there is a salt mine which dates (at least) to the 1100's. The shafts were over 600 metres deep

most of the manufacturing was dome by hand- but bear in mind that some of the manufacturing- like casting cannon or building ships- was a specialised industry way before the 15th century and employed thousands of specialised workers

Assuming you mean "production" and not "the production", in the 15th century, Cosimo Pater Patria, a wealthy banker, took it upon himself for reasons known only to him, to gather together artisans from around Italy by ostensibly have a contest for creating a pair of beautiful bronze doors for a church or cathedral. The winner was eventually Ghiberti but the contest itself sparked an entire new way of looking at the world. It created the Renaissance. The Renaissance gave rise not to just art but to new inventions, new discoveries. And it was largely thanks to Cosimo de Medici.
