Personally I like a simple white satin wood, or non-gloss coating! Use a wide brush for the main areas and a smaller brush for the tricky bits! Keep with the grain direction and don't put too much paint or varnish on at a time - drips are horrible!

is it installed already? If not, are they planks or sheets? Are they pre-primed or no?
I usually avoid answering lazy questions, but since I did this last weekend, I'll make an exception in this case.
If they are unprimed/unpainted planks that have not been installed, it's easiest (minus the prepwork) to use paint-spraying (the pretty much goes for all trim). However that's the more expensive route, as you will need to buy the spray paint gun and air compressor (although I think now they have a spray gun with a hose that you just dunk into a 5-gallon bucket of paint).
If the wainscot is already installed, then any method is easy, but I prefer to use a roller and brush so I don't get any paint on the walls and floor (unless you want to cover everything (minus the wainscot) in plastic sheeting.

Need more info - is it varnished? poly? what is it's surface finished with now. Do you want a gloss or matte finish?
I do want to see the ladder you would use, burning, lol. Or maybe you're a very short guy.
