Your first motorcycle will be like your first boyfriend .... a lot of fun to ride for a while, but it won't be long until you want something else. I would suggest buying a used motorcycle so you don't take the big depreciation drop when you decide to change.
At 5'8", you are tall enough to ride any motorcycle made. I have women friends that are just above 5' that are riding Harley touring bikes.
So, the best answer is ..... whatever you like. If you are going on cruises over 100 miles, you will want to go bigger and heavier than the 500cc. For cruising around in town and commuting, you should be fine with it.
Everybody has their opinion on which motorcycle is best, and I think a lot of them are splitting hairs on the difference. But, one thing I've noticed is that where ever you go, you will find a Honda shop that can service your motorcycle. I was doing some jumps in a field on my road king one time and broke a mount on a saddle bag. I counted three Honda shops on my way to getting the new mount.
You will have to decide if you like taking the twisty curves at warp speed on a sport bike, or like the more comfortable seating position of a cruiser, or maybe a sport touring bike, or a dual sport. It's all up to you

The lady at my house rode a Honda VT-600 Shadow for a number of years both commuting and taking longer trips on it.
A neighbor lady had a 500cc Kawasaki Vulcan as a first bike and eventually made a cross-country trip on it.
Both of these bikes sit pretty low.

Love my Hondas!!!
I have a 1982 Nighthawk 450 (which I moved from Atlanta to Nashville on, in several trips) and a 1983 FT500 Ascot.
I paid just over $1000 each for them on ebay.
I am also 5'8", and with either of these bikes the height helps. But neither of them weighs much (under 400lb dry weight), run forever and are low maintenance.
Sport bikes might be good to consider. Many have hard luggage available if you plan to travel. They're lightweight (you'll have to push your bike sooner or later) and have loads of power.

First of all i recently passed my riders course to about 6months ago....I started out with the bike i wanted A harley davidson dyna street bob. 1450cc and its great...you will have a lot of cofidence after you pass your class you want more than 500cc you would get very bored of that little power very quickly once you become used to your new bike....

The Kawasaki ninja EX250, ninja EX500R and Suzuki GS500F would all be grate choices for beginners, the 600s and 650 are going to be more expensive and heavier therefor harder for you to ride.They might be too powerful and unpredictable for you or any beginner to ride. The Ninjas and the GS500F have plenty of power and are small cheap and light.

BMW F650 (I know you said <500} single cylinder Nice looking, Adjustable height and suspension, good weight for roads large and small,retains value and is incredibly dependable.It could easily be the only bike you ever buy.

Seat height vary important sit on few then make you mind you! lok at harley - Davidson sporters 1200 looks right for height... maybe big bike like a dyna narrow glide...FXDNG?
