Guns, Germs and Steel is a good choice.
I'd recommend /The Island at the Center of the World/ by Russell Shorto. It's a new look at the history of Dutch New Amsterdam, it reads like a novel, and it will change one's view of American history altogether.
Is your dad interested in social history? If so, and he hasn't read /A Midwive's Tale/ by Laurel Thatcher Ulrich, he might like it. It's a bit dry, but it well deserved its Pulitzer.
And, assuming he hasn't already read all of them, any of David McCullough's books are great reads. I especially enjoyed /1776/ and his book on young Theodore Roosevelt, /Mornings on Horseback/.

If he likes war novels I'd suggest:

All Quit on the Western Front- WWI
Or
When Heaven and Earth Changed Places- Vietnam

But check to see if he's read them. If your looking for something challenging and insightful I'd suggest:

Diamond's - Guns, Germs and Steel

Diamond is a Pulitzer Prize winning author who has provided me with the best answer (so far) as to why things are the way they are. A must read for anyone at or above collegiate level.

'Rites of Peace' by Adam Zamoyski published by HarperCollins. It is about the fall of Napoleon and the Congress of Vienna.
'Cassell's Chronolgy of World History' edited by Hywel Williams.. 700 or so pages of dates, events and ideas that made history.
'From Atlanta to the Sea' by General William T Sherman.An edition with situation maps if possible.

what type of history is he interested in? or is he just interested in history in general?

get him a gift certificate to a book store. that it probably your best bet.
