1 yard x 1 yard = 9 sq feet.
3 yards x 9 sq feet = 81 cu feet

As someone else explained, there is no dirt in a hole! These 81 cu ft of dirt WERE where the hole is now.

If he is currently digging the hole... it is impossible to answer your question with the limited information you have provided. In the end though, he will have removed 81 cubic feet of dirt - assuming it is in fact dirt that he is digging. If I'm reading you right, the answer that you want...is 81. Me thinks you already know/knew this though...
