The victory of San Jacinto ended that war simply because the Mexican leader, General Santa Anna, was captured and became quite willing to grant independence to Texas in exchange for his life.
All of these other questions are too involved to answer here.
We would have to write many pages.
Just a suggestion - you could separate these questions and people would answer them piecemeal. This seems overwhelming all together.

Battle of San Jacinto, fought on April 21, 1836 lasted only about 20 minutes and ended by 5 PM, so it was not fought at night.

Colonel James Fannin and ~ 400 men died in fighting near Goliad. After surrendering, over 300 surviving, unarmed Texans were massacred by Mexican soldiers - - the morning of Palm Sunday, March 27, 1836 - - as ordered by Colonel Portilla. Col. Fannin was the last to be murdered. The bodies were stacked and burned.

Fannin was not at the Alamo. Crockett, Bowie, and Travis did die at the Alamo. What they have in common is that all four died for Texas independence.

Mexico won independence from Spain in 1821.

The Historical Society of Texas has many answers and can be pulled up on line.
According to Old West Historian Colonel Bain the battle started over land titles in Liberty, Texas. Remember Crockett and his buddies were all from Tennessee. The capture of San Anna stopped the war. If you get a chance see the Sam Houston museum, for San Anna's saddle is on display there. Happy Hunting!!

Because Sam Houston attacked at night while the mexican soldiers were asleep and captured santa anna. Sam Houston retreated before the battle because his army wasn't ready to fight. Davy Crodkett, William B. Travis, James fannin, and James Bowie all fought at the alamo.Texan soldiers knew the land and fought for their rights since they were not part of U.S.A. Mexican soldiers just fought out of greed and revenge.
