A simple definition of the phrase "once you go black, you don't go back" would be that once a person of non-black roots has a relationship of any kind with a black person, it is presumed that a person of another ethnicity will never be able to compare with the relationship with said black person.

I don't know about this being true but in my husband's case, it was true. Lol. The last couple of girls before me that he dated were black and he ended up marrying me, a black woman, so I guess he didn't want to go back. :-P

But I do agree that it's a silly saying.

ACTUALLY, It's once you go Black you can't come back. It is a warning to white girls from the 1950s-1960s from their white community that if they got involved with Black men, they were no longer welcomed among their own people. It worked in many regards. Just look at the numbers of white women from the 60s who married or had children with men of color and then were no longer accepted by their own families and friends.
