If you are asking when hunting laws were first passed in the US, several colonies had laws regarding hunting BEFORE the Declaration of Independence.
If you are asking when current hunting laws apply to your hunting, the answer, as others have said is 24 hours a day, 7 days a week, 365 day a year.
If you are asking when hunting season starts, it depends on WHAT you are hunting, HOW you are hunting, and WHERE you are hunting. You did not supply any of that information.
