lower temp thermostat, more efficient water pump (upgraded racing pump) larger 3-core aluminum radiator, better antifreeze/coolant with water-wetter added to it.

sometimes after rebuilding a 350 chev alot of people will put a crome timing chain cover on and the timing marks dont line up correctly which will cause an overheat problem. or they dont put a new crankshaft damper (harmonic balancer) on the new engine. A dirty radiator and incorectly installed thermostat or intake gaskets can also cause this.

you may need to get a bigger radiator
try a performance pump , coolant additive ,or lower thermostat like a 160 degree
make sure your lower hose isn't collapsing
also if you have headers you can wrap them
that will remove alot of heat from the engine compartment
and thats all the ideas i have right now
good luck

check the thermostat it could be defective. run the truck with the radiator cap off and watch to see if you have water moving from the inlet side to the outlet side. the radiator might be plugged. there might also be air in the system. remove the t-stat pour the block full of coolant and replace the t-stat.

Flush the cooling system,(radiator), considering in your rebuild ya had the block boiled out and a new thermostat in case ya didn't change it. Cost for everything:$59
