I think the Alexis in downtown Seattle is very romantic - it's a boutique hotel so each room is unique and VERY nice. There's also a wine serving in the lobby every evening, and it's convenient to everything you'd want to walk to (waterfront, restaurants, museums).
The Westin wins for views and modern decor...the Marriott Waterfront is nice and has good views, but is difficult to walk to things from.

I also like the Sorrento Hotel and the Inn at the Market. My husband and I stayed at the Sorrento for our wedding night.
And for something a little different, you might look into the B&B that has their rooms on an old tugboat:
On Lake Union the tugboat lodging is MV Challenger Bunk and Breakfast, 1001 Fairview Avenue North, #1600 Seattle, WA 98109, 206/340-1201, fax 206/621-9208.

The Edgewater is WONDERFUL - I stayed there my first two nights here when I first moved here. It's the only hotel right on the water (literally - it's on a pier!) and has high cushy beds, fireplaces in every room and gorgeous views. It also has quite a bit of history - the Beatles and Led Zepellin both stayed there. It's also within walking distance of Pike Place Market and the Seattle Aquarium.
