"Caesar's Palace" is the obvious one.
More obscure would be "The Seven Hillston Hotel"
"Gladiator Rest" "Lions' Mouth Inn"
"Publius Casa" "Romada Inn"
If you liked Audrey Hepburn, "Roman Holiday Inn"
"Hotel Sixtus" - - "We'll leave the torch lit"
"Tiber View Arms" "Nero Downtown"
"Commodus Commodious" - - that's BAD - I'd better quit
'Tanks' has a good idea below with chariot
- - - how 'bout the "Chariot Marriott"

To be strictly accurate A Roman inn was called a Mansio, but how about Hadrian's Halt, Julius' Joint, Trajan's Travelodge, Cafe Nero (oh, it's been done). Possibly "The Forum", Palatine Place, Centurion's Rest, Chariots 'R Us or even Hotel SPQR. :)

I don't know about catchy but a real Roman inn name was the "Inn of Sittius" in Pompeii. It had an elephant sign on it so might have been known to the locals as the Elephant Inn
