Mabel would not make me think of someone born in the month of may. I get what you're saying, but I don't automatically think that.
What about Maybelle or Mabeline? Those are both nice variations that add a touch more femininity to the original name. Good luck!

April's are usually born in April, June in June, May's- not always born in May.
My SIL is named Marchelle, but her birthday is June 11- she's named for her father, Marshall.
