I want to spend about $300
I want it for the car
I want to occasionally take it hiking

I am technologically challenged so it must be easy to use.

You can try Garmin StreetPilot c340. Pros: Easy to use, sharp screen, clear voice instructions and less expensive than other GPS units with comparable features.
I find a review for it, you can have a look:

And it is not expensive, I find that a decent deal for it is only $230.

Not sure if i will be a big help but garmin is the best brand to get. They do have handheld as apposed to portable (car). Not sure if you can take the one in the car with you hiking though. Don't look on garmin.com (expensive), check out best buy or circuit city.com. Good luck!

I would suggest a Garmin or a tom tom. Both are easy to use and relatively inexpensive.
Tom Toms start at around $150
Garmins start at around $300
