I need to know why you can't re-freeze something u had already put in the freezer and defreezed. Why is it bad, what happens to the molecules and everything?

Two kinds of reasons.

By the time something has been frozen and thawed out twice, ice crystals growing through the cell walls will have made the structure pretty mushy.

More seriously, bacteria can grow very quickly in food that has been frozen and thawed.

ice has a lower density than water. when cells freeze, the water forms ice, which will occupy a larger volume than the water did. in many instances it will puncture the cell wall.

this is one of the reasons why there is no safe way to freeze a living animal and revive it (IE: science fiction type hibernation)
