Cold rolled or hot rolled describes the processing of a metal. Are you speaking of mild (significant carbon content) ferous metal, aka sheet steel?

The most malleable (bendable) would be a factor of content, not process.

24 k. gold is an example of soft, easily bendable metal. Test this with hand pressure on high gold content jewelry!

I think copper is easy as it's cheap and easy to anneal (gold is softer, but may not be quite realistic). If you think it's hard to bend, just heat it up to a dull red, cool, and you can bend it very easily by hand. If it gets work hardened, just anneal again. Though it really depends what you want to use it for.

Look at link for comparison hot vs cold rolled steel. Hot rolled should be easier to work as it shouldn't be work hardened.
