I write it like a car going around a figure eight track. So normal S and no straight line, all curved. I start at the very top of the 8. If I am lettering a drawing I sometimes draw it like 2 opposing 3s or as a small circle over a large circle but draw the circles as C shaped segments. Right handed.

In it's simplest form, just draw the number "8" and fill in the details of eyes, nose, mouth, arms and legs.
How many circles is, purely, a matter of choice. Remember, not all snow man figures are made up of balls of snow. Some are more "realistic" sculptures than others.
You want to be more "origianal?" Make a snow WOMAN.

I'd use 3 ...small for the head...bigger for the body and bigger still for the legs.
