Most common food coloring dyes are harmless.
I know this as I had a couple clients in my aquarium maintenance business several years back that thought it would be cool to add food coloring to their saltwater tanks behind the bar so that it would be more interesting for the bar patrons.
Even though I was not pleased with this, not harm came of the fish (and these were saltwater fish which are general more sensitive to environmental conditions).
That said Malachite Green and Methylene Blue are also chemical dyes with anti-parasite, bacterial and fungal properties and should be used accordingly. Please see this article for more information about these chemical dyes:

depends on what dye your using.
but I would suggest against it.
with dyeing the water, you risk dyeing the fish (not to mention dyeing the water is also a method used to dye the fish). the dye can cause many negative affects on the fish, such as stunting it's growth and development (if you have young fish). It also might have delayed effects that make it more prone to disease and illness and one day your fish might just die (even if you take them out of the dyed water and into fresh water...the dye is still in there system.)
also with dyeing the water....you risk the dye killing the fish. think of it this way....even thou it's a low amount of dye your thinking of trying....fish are different. if you say put like 10 goldfish in a bowl of dye and water; 6 might die in a day, three in a month and the last one might live almost a full fishie life.
it doesn't matter if it's food dye or any other dye.....there's still risks of negative affects on the fish.

If its not made for putting it in an aquarium.. then it would kill them..
you could get something from your local fish store, ask them if theres something that can change the colour of the water.. Or you can put a background on your tank..

i like the Ivan Drago quote in the first answer. but yea this is a life of an animal we're talking about. if it sounds like a bad idea chances are it is. for one, the risk of chemicals in the dye may effect the health of the fish. secondly your replacing clear water (hopefully) with a colored water..would that eb the equivalent of us being color-blind?

Some kinds can kill fish.
For another option (that my betta loves) is they sell colored lights. And they are fairly inexpensive. My betta adores his blue light.
And I absolutely would not use Malachite Green or Methylene Blue. These are medications and over use of them can do more harm than good.

go to the fish supply store, they have stuff that is like a vitamin for the water and it has some color in it.

Yeah....probably. Their water is like our air. Their water needs to be constant, clean, and have all the right levels. Add food coloring to the mix and you're going to have some problems......like dead fishies. Maybe put a cool background on your tank, or add some neat decorations to spice things up a bit!

woahz, i assume you will turn him blue for-realz. idk only kidding.. i would not do this 'reason bettas desire their water to be appropriate for them you recognize? you're taking plenty look after a betta cleansing out the water and rocks and all that stuff.. This one time some glitter landed from a christmas ornament into my sisters betta tank and killed him reason' we assumed he ate it. additionally he's been residing for almost a 365 days. I dunno if bettas swallow the water around them too alongside with swimming as much as take a breath.. i assume blue water could seem cool, consistent with possibility a blue easy could seem even cooler!!

i dont know if reagular food coloring is the right option. but i do know that they use something to turn the chicago river green for saint patys day.
