how come one day they convince you they like you and the next day they treat you like dirt.???

Men are actually pretty straightforward, except when they twist and turn things to have sex but even that's pretty straightforward if you read between the lines. They usually let you know what they want and what they are willing to give and not give, it's just that women have a hard time accepting it...so we either don't hear what they're saying or hope we can change them.
Women, on the other hand, play a lot more mind games. For some reason we seem to have a harder time saying straight up exactly what it is we want and what we're willing to give and not give, so we are more likely to do the "dancing around", hence be perceived as playing games.

People of both genders are good at mind games. You can't blame just the guys on this one. And not ALL men or ALL women play games. It's probably a small percentage for either sex, but are statistically heavier with those under 25 years old.

Why do women enjoy playing mind games with men?
Sweetie it is a part of life. Both men and women are guilty of it. Of course some more than others. People tell people things for all kinds of reasons. Mostly it is to get what they want. Once they have achieved that they are free to be themselves.

Men are very simplistic. Women are complicated. If one guy is playing with you is because you are letting him. Perhaps you pick that kind of guy without ever knowing. There are hundreds of good men out there, keep looking.

Playing games with people's minds isn't gender-based behavior. People who play games with people's emotions are immature, hail from less socially evolved families or have emotional problems including anti-social disorders and low self-esteem. Also, many feeble-minded gullible people attract the feeding frenzy of game playing because they present themselves as easy targets. No one messes with you if you aren't stupid and if you aren't tolerant of this behavior.

There are people on both sides who actually do this, but for the most part it is misunderstanding. Try to find the humor in it when you have had time to cool down. Get a thick skin if you want to continue inter-gender communication.

Who says that we do? Peoples moods and priorities change from day to day. Our way of dealing with your ego differs with each scenario. People learn that invaluable lesson as we mature. Don't blame others if they are not in the mood to pander to your needs every day. Each of us lives their own life, you are merely a part of someone else's.
