Acknowledge in some meaningful way that you love, honor and respect them as your parents. I onetime mentioned to my mom that I was so proud of her that I would brag about her to almost anyone... she said I was telling the wrong person.
She said I should tell her. I did many times before she passed away.

Why don't you get a nice picture frame and frame a nice family picture ? Or you can take them out to a movie and ice cream after the show.

I may be too wishy-washy, but a sincere, honest Christmas card telling them how you appreciate them would probably best. Or a Nintendo Wii. That would benefit you as well. Hehe.

Maybe take them out for a nice dinner. Your parents will be thrilled, they would love to spend time with you.

Maybe a subscription to a magazine? (that way they can enjoy it all year round)
