Camoflauge?

Most fish change their coloration to some degree, even if it's just light to dark in response to day/night conditions. This helps them blend in to their surroundings to avoid predators. Some (flounders, sunfish) change according to their present environment, so if they go from an area of lighter substrate to darker, or from a highly vegetated area to open water, their colors and patters change.

Some others do it to indicate their moods or breeding condition, but I doubt these would apply to your pleco as much as the others.
