what does "Order Proof" mean with self publishing?

It means you have to pay extra money to order a proof copy of your book before it is printed. A proof is another name for a galley (that's what they call it in REAL publishing). Pay it. Get the proof and read it carefully, because if you don't and you find errors later, you are screwed.
