Is he eating more at night to make up for it?
That's not an uncommon pattern for breastfed babies. He knows that you'll come home soon, and he's holding out until he gets it straight from the tap.

So he's been taking the bottle with no problem up until now, but has just begun refusing it?
I am assuming that if you had changed his diet at all (a switch from pumped milk to formula, for example), you would have mentioned it. Is he also seeming especially fussy during this time? Is he crying to be fed?
Going without a meal for five hours is not going to hurt a 3-month-old--some babies even sleep through the night at that age (not all!) and therefore go five, six or seven hours without eating.
Congratulations. You have a little guy with a personality there on your hands. I wouldn't worry too much. As others have said, if he gets hungry, he will eat. As long as his behavior and habits (naps, wet/dirty diapers, fussiness) are as usual otherwise, I don't think there's anything to worry about.
He's getting close to being ready to start on rice cereal soon. That may interest him more than a bottle. ;-)

Perfectly fine.
My second baby refuses to eat sometimes until I get home. Sometimes he'll take, other times he won't. I wouldn't worry about it. At his age he's capable of going that long without nursing--just be prepared for some marathon sessions when you do get home!
ETA: You're still 3 months away from rice cereal: I'm surprised that the answer above me would mention it since the new recommendations from the American Academy of Pediatrics (not to mention the World Health Organization) recommend no solids, including nutritionally insignificant rice cereal for the first 6 months of a breastfed baby's life.

My daughter did this about the same age. I asked her pediatrician about it and he said it's probably between growth spurts and just isn't interested in more feeding (shes's getting enough for the time being). He also said that babies WILL NOT starve themselves, so I wouldn't be concerned especially if your baby is eating throughout the day anyway. It just may be a different eating pattern that your baby just developed.

That seems pretty long at 3 months. 3 hours when he's awake seems okay, but 5? Thats a lonnnng time to have nothing.
Maybe he's teething. Just make sure its always being offered to him.

If he is hungry...NO. If he is not hungry during that time it is okay. He may not be wanting to eat because he wants something else. Make sure that he has food ( you know pumped milk). If he just isn't eating because he isn't getting to suckle from you than always remember that babies will eat when they are hungry.
