I ride street so all these are for the R6 or the suzuk 600, I wish I knew what it is, I'll assume it's a gsx-r, if it's not then these are only for the R6.
you should get him in order of cost a nice swing arm extension, a good rear brake rotor/fronts too, a nice tire (the one he has will wear out eventually), a slip on (exhaust) (yoshimura if you ask me).
or if you've got the money personally I would love to get a nice pair of HID's (super white/blue headlight bulbs). I have these on my gsx-r and they are awesome!
A radar detector would be a little cheaper and very cool as well.
really depends on how much you want to spend, you'll have trouble spending under $100 on anything worth while for a bike. and DON'T BUY ANYTHING FROM THE DEALER, but you should go find out what you should get from them.
oh yeah, they sell these badass reflective stickers that you put on your rims, they glow at night and come in a ton of colors, they look really cool! I don't know if this site offers all the colors or the best price, google it.

if you dont know about bikes steer clear of buying parts for him. its a lot of hassle if you get it wrong eg if you buy that exhaust the other answerer said your boyfriend might have read reviews or heard its rubbish and would have wanted one of the other 500 exhausts out there (there are alot of exhaust manufacturers out there as well as every other part).
he sounds like he has money so something more thoughtful might be better.
try getting 2 tickets for you and him to go and see one of those races.... moto gp has finished now so try superbikes or motor cross instead.
if you like bikes think about getting a license and be on your way to getting your own (thats what my girlfriend did and i love it)
pay for him to get out on a trackday if he has never done one.... or even if he has he would love it. in case you dont know a track day is where you turn up on a track and either spending the day racing or someone (usually an ex racer) teaches you how to ride faster
unless you know his exact sizes steer clear of buying bike clothes because each manufacturer has different sizes and i personally have to try about 3 different sizes before i find the fit i like
the best thing my girlfriend did for me was some suggestive photos on the bike and a live show the next day.
if he loves rossi buy him the autobiography or a die cast scale replica of one of rossis winning bikes (any size from the size of a fist to the real thing) for anywhere between £10- £1000
i know i would love it if i got any of those but the best thing my girlfriend has ever done is to share my passion for bikes.
she rides her own bandit 400, wears full pink leathers and is stunningly gorgeous.

Best holiday gift I got in a long time was TIVO. Ya, I know it is not bike related, but he can setup keywords and record anything motorcycle related. My girlfriend got me one and my first thought was I don't need one of these. But now I can't live without it.

Get a set of suzuki lingerie or bikini. Only thing better than bikes is babes. Any way of mixing the 2 is always a thrill. get a skimpy bikini and go sit on his bike and suprise him. Take pics too
