It is not a question of absorption. It is a matter of metabolism. The alcohol remaining the body is what determines sobriety. If the alcohol is burned off, there is no effect ( although the liver still has to labor with the burden of dealing with the residual products -- which is why cirrhosis of the liver is a common malady of heavy drinkers ).

The average body (liver) can convert 1/2 ounce of pure alcohol per hour. If you dont drink too heavily you will be sober in the morning but if your body hasnt had time to discard the rest of the by products you have TAADAA a hangover.
Of course if you drink a LOT you can wake up still drunk.

The better nick you keep your liver in, the faster it can metabolise alcohol.
