What are the factors to consider in planning for special occassions?

1. You need to first know your budget, so you know how much meat or other more expensive items, such as drinks, will be allowed.
2. You need to have a general idea of the number of guests.
What is both the largest and smallest expected attendance? Have you requested an RSVP from the guests so you can know?
3. You need to give attention to "who" the attendees will be.
If it is a Jewish group, you need a list of 'kosher foods.' If it is a widely diverse international group, you may want to include 'vegetarian options.'
4. You need to consider the overall atmosphere at the event. Will this be a sit-down meal, or a more casual buffet? Is the event being held at a usual 'mealtime', or would a 'snack' be enough for the hour? How much time is allowed for the meal?

You need to consider presentation and balance. You have to have a meal that has meats, veggies, and a starch, like pasta or something. You also need to make it look nice, and be pleasing to the eye by having multiple colors and shape, like round peas and long noodles for example. Is this what you're looking for?
