I don't know much about them. I'm looking for a freestyle board that comes with bindings. I'm male, 5'7, about 160 lbs and my shoe size is about 9.5. By what criteria should I discriminate? Should I choose based just on my height and weight?

Try this snowboard size calculator that will even give you suggestions on the boards that might work the best for you:

For your size, a good freestyle board would be about 151cm. Brands that I might suggest are Rome, K2, Forum, Gnu and Lib Tech

Good Luck

if its your first board id suggest somthing a little less expensive, but since your 5'7 that helps alot i am 5'6 and my board is a one fifty, so maybe the best board size for you would be maybe one fifty-one fifty five, weight has nothing to do with it, when you buy your bindings i think they are one size fits all but ask the rep. a really good snowboard brand is a ride, they are a little expensive but way cheaper than a burton. hope this helps shop on line!!! they are always cheaper!!
