I'm on a short visit to Japan. I have a JR pass and want to do the best hiking I can. I don't mind cold weather or snow but I didn't bring any climbing or mountaineering gear so I need pretty mild outdoor activities. Suggestions on places that are easy to get go by Japan Rail and can be seen in a day or two? Thanks.

Go to Yamadera in Yamagata. It gets dumped on in winter, but the priests shovel off the footpaths every morning so if you don't mind the cold....

With a rail pass I suggest you get there by going up to Sendai, then taking the Senzan line to Yamadera, then proceeding to Yamagata station where you can catch the Yamagata Shinkansen back to Tokyo.

You'll find no problem for your hiking in winter. Ask the local people "Satoyama 里山" low mountains or hills about 1000m high or lower. From Tokyo you can head to "Takao san" (高尾山)or climb over Hakone old pass. From Kyoto you have "Hiei-zan" (比叡山)
From Osaka or Kobe, you could walk through "Rokko Mountain Range" (六甲山縦走)。You need good pair of walking shoes but I do not expect heavy snow on those I mentioned in December.
