The first use of that symbol to mean infinity is usually traced back to mathematician John Wallis (who would later instruct Isaac Newton). He used the symbol in an article in 1655... but exactly why he chose THAT symbol is a bit of a mystery.

The theory I like best has to do with the late Roman Empire. When they wanted to denote a thousand of something, they would hook two zeroes together in kind of the same way we use commas in long numbers to group the digits more easily. To the Romans, a thousand was a lot of something, so sometimes they used that symbol too not just for a thousand, but just to mean 'lots of stuff'. And since in the 1600's classic scholarship was very important in a university, Mr Wallis might have easily picked up the symbol from there.

Another theory is that it is a modification of the omega symbol. Omega is, of course, the last letter of the Greek alphabet and as such was sometimes used to mean the last of something. By modifying the omega, Wallis might thus have been referring to something without an end - infinity.

The existence of an infinite set is taken essentially as an axiom, and the different sizes of sets (including the different sizes of infinity) are known as the cardinal numbers, and have a rigorous definition that's too involved to explain here in full.

Its a symbol of infinity, rebirth etc. It would usually have all of the ends joined together, but that up to you. Nice pic, it also looks a bit like an angel is you squint a bit.
