1. Maybe too long in the water. I'm looking at a recipe from the food network, and it says 30 seconds total. 2. No oil on the dough. The reference recipe uses yeast and the work surface used for shaping the pretzels is supposed to be oiled to keep the dough from sticking. That could also prevent water from soaking in. Maybe try giving your pretzels a spritz with nostick spray. If neither of these tips works, you can always just make straight ropes about 4-5 inches long instead of the usual coiled shape and call them pretzel dippers.

I never thought about that. Hmm... I don't think so though, because even if a pretzel doesn't have salt on it, it's still sort of salty. And just overall, it has somewhat of a different taste.
I think they're cousins, though.

That's a really good question... there are definate similarities! However I don't think I'd put cream cheese on a saltless pretzel.
