You will have to be sensible, behave like you would in a big town near where you live, wherever you go.
But remember that in the rural areas of Greece and Turkey the people will not speak much English.

I have not been in Italy, Greece nor Turkey, but have heard a few scary stories about Turkey (the kind I believe) but I have also heard good stories about traveling there.
I have been in France and know that it is safe but still an experience.

If you have never done a backpacking trip, stay where people will understand you (IE France, Italy, bigger or more touristy towns in Greece and Turkey).

Use hostels rather than staying in the homes of people you have just met.
And do not take too much luggage, so you can have all with you in the seat in the train, rather than at the end of the carriage.

If you want to back-pack as in just walking wherever your feet lead you, better do not do it alone unless you know the language and culture of the country you go or you are very sure what you are doing.
