Because there arent really that many good jobs, i reckon 80% of my friends hate their jobs. Unless you've done a degree and got a 1st in the subject you wish to pursue, just look for something decent!

I am in France and looking for a job in Europe, but at my salary there are loads of other people that want to step up to match me, and willing to do it for a lower salary - just to have the level.

It isn't. There are lots of great jobs out there, you just haven't found the one that's right for you yet. Maybe you need to look at what you're interested in and what you're qualified for, so as to understand what you need to do to get the job you really want,

have a look at www.gumtree.com there are a lot of jobs there but it kinda depends on what kind of job your looking for.

probably due to all of the immigrants there.
in america we are outsorcing jobs overseas
causing us a similar problem.
