I have a 1987 Porsche 924S and I would like it to be a Quick Release, so can I change my EXACT ORIGINAL Steering Wheel to a Quick Release(IT DOES NOT HAVE A AIRBAG BUT HAS A HORN ONLY)

yes you can change it to a quick release. It'll be easier without the airbag and since you have only the horn it should be simple.

Yes, many companies sell quick release hubs that will work in a Porsche 924 (or pretty much any car for that matter). Any retailer that carries Sparco, Momo, or similar wheels should have the adapters for those wheels.
