Monday to Friday, generally it's 5 or 6pm - though on Thursdays we have late night shopping until 9pm. Weekends it's usually 4pm.

The actual Seawater level change with the influence of the moon and the sun. What is reffered to as sea level is a level pegged on almost the average level of the tides. I don't know the the exact way in which it was determined but "sea level" everywhere on earth is the same level. There is no guarantee that the actual water level anywhere is the same. The water is drawn (and lets only take the moon as an example now and forget the influence of the sun) in a conical shape towards the moon, with the tip of the cone closest to the exact place where the moon is the closest to earth. That mean that even if you stand in Sydney and check the water level in Brisbane, the water level will most always be different. It depend on where exactly the Point of the Cone is.

Sydney is a major city, and so like all major, modern cities, it all depends on the shop. Basically you will find them all open until 5pm, and most open until about 8 or 9 on weekdays.

Depends on the shop. There are 24 hour supermarkets in some places.
