Bethlehem, where Jesus was born, is in Israel. The climate there is similar to California, warm and dry with occasional cool nights.
While we do not know the Date of Jesus' birth, there are 4 specific occurrences mentioned in the record of the event that would help us to pin it down.
1) A census was taken - the reason they traveled to Bethlehem
2) A specific person was governor - (traceable by history)
3) An extra bright star appeared in the sky over Bethlehem. So bright that the "wise men" followed it from far off countries
4) Mary's pregnancy was 6 mo. after her cousin Elizabeth's to whom John the Baptist was born.

And Yes, shepherds were in the fields with their flocks.

No its an arbitrary day picked by the catholic church.
No one knows the actual date as the Gregorian calender wasn't in use and no one recorded a date.
it was piggy backed on to the solstice festivals of European traditions to bring converts over to the christian faith.
