We make birdfeeders the weekend before solstice then hang them around the yard on solstice morning.
I always give a talk to my son's class at school about winter solstice and what it means.
We got a tree this weekend and decorated it with images of the sun and nature-themed ornaments. The trunk will be saved to be next year's Yule log.
Solstice evening, we have a couple of friends over, burn the yule log (trunk from last year's solstice tree), talk about the past year and the year to come, talk about seasons, nature, etc. We have a big feast and everyone gets a small, homemade gift to take home.
We celebrate Christmas a few days later because it's a day off work!!!!

A long walk, good conversation, and yes, time well-spent with a Special Someone in your life ... that is the BEST Way to CELEBRATE the Winter Solstice!
