What grade level?
Given calculus, measuring the speed of light in water can be done in an evening. Probably too advanced in general, few high school students have calculus.
Grade school, pendulum measurements & derivation of equations could be done in an evening if you had some help, this might work for mid to late elementary.
Measuring how much a spring deflects under different weights and deriving the underlying equations is another good possible one night elementary school project, again having some adult with Word experience and some physics knowledge will be invaluable, if possible.

Is the strength of a magnet strongest through paper, plastic or glass? That's a fast & easy one and it can be done with the magnets on your refrigerator.

Which juice cleans a penny the best, orange juice, lemon (or lime) juice or apple juice? Just find three dark pennies, put them in the juice for a while till you see the difference. Record your findings.

My kids did these projects and got 5 A's.
