Are most restaurants open on new years day (Jan 1)? I know Swiss Chalet is. Which ones would be closed?

We always go out to brunch on New Year's Day. I would check with the restaurants you are interested in going to.

This is a yes and no answer. If you mean in most of the city of Orlando,, the answer is mostly no. But as you get close to the attractions areas, Yes they are open for the many thousands of tourists. All hotel dining rooms will be open. as will all the restaurants at Disney World or Universal Resort.

All fast food & pizza should be open. I'd think it would be one of their biggest days with all the football games on.

I would say that more than likely they are not, and if you want to eat out on new years day then i suggest you book it.
