Oh my goodness you MUST add some Trans-Siberian Orchestra to that list!!!
They are sooo awesome!!
My personal favorites of theirs are Christmas Eve Sarajevo, Christmas Canon, Christmas Canon Rock, and the Music Box but EVERYTHING on their 3 Xmas CDs is AMAZING.
For a similar flavor, might I suggest Manheim Steamroller...
