Do they want a third paragraph about anything about me, or is this to explain things like classes not explained on my application?

If there was anything important which you don't feel you got a chance to express elsewhere in the application, this is your place to do that. It could be anything from a challenge you overcame to an explanation of something you stated earlier to an explanation of why you feel passionately about going to that school. You do not need to do this, though, if there is no new information.
