Please.. they have you say cheese because when you say the word your mouth forms a smile. Anything that rhymes with cheese would be a good alternative.

just smile or say "pea"
thats what a lady told me to say when she was taking a picture of me.she said she hated cheese and didn't want to hear that word.so i said pea.
