The interior of the microwave is a TUNED CAVITY.

Adding metal grossly DETUNES it and causes the energy inside to discharge as sparks.

The moisture in the objects detune the cavity and the energy is discharged into a larger, more even area that contains the moisture.

Voltage builds up on the conductors due to the the high electric field of the microwave radiation. This breaks down (ionizes) the air.
