Because there is a breading procedure that the cook didn`t do ,this happens alot when new cooks are being trained or at nite the cooks get lazy.

Its a low quality product and the chicken is provided by various sources so there may be continuity and quality issues. I'd personally prefer dry rather than dripping with fat..ick! Boston Market at least offers "real" chicken.
