We always do most of the cleaning up after the party, and the next day, take care of the rest. It really doesn't take too long to do a clean up if everyone pitches in. Most people take home their dishes if they brought food and the little that is left is easily refrigerated. We try to have containers for empties so people usually comply with that and it helps control the separation of different materials like trash and recyclables.

Usually my parties are over in the morning---after midnight.
I've found that it's best to get everyone who is around to help you clean up. So it's not such a burden later.

I've found the "can everyone help clean up" gets a pretty positive response. Many of my parties, it's the guys who do all the cleaning. You threw the party, the least they can do is help clean up.
