Is it a good idea to write more than at least 500 words? I have about 600 words, and I think writing more will take away from it?

If you feel you have all the information you need, stop.
Seriously, your teacher/professor has many other essays to mark and will likely be frustrated if they're handed a really long essay.
As a student I know how tempting it can be to put in a lot of information so we look like we've put in the time and effort, but as the daughter of a professor I've learned the educator is simply looking to see if you know what you're talking about and can accurately describe it from all viewpoints. Quality, not quantity, of words are important. Using too many words can hurt you as the educator feels it adds to their workload (and it really does).

Make sure your essay is concise, well expressed, and just over the 500 word minimum. Several people may be looking at your essay if a scholarship is involved. They don't appreciate a lot of words which say nothing.. Revise! Revise! and Revise.

Stop you don't want to overwrite. Just try to write 500 or 600 A++ words since you already have them.

The reason they say 500 is that they have to sort through thousands of applications. I would suggest staying closer to number they provide. 600 should be fine, but 1000 would be way to much.

600 words seems to be a good length. What they don't want is someone to shoot them two or three sentences (or a full book for that matter).

Quality is better than quantity in this case. If you think you did good, stop there and begin editing to make it look better.
